Sometimes the best way to get on with your day is to enjoy a delicious waffle. Not just any waffle though, I am taking about loaded, healthy, and GREEN waffles. Yup, I just said green! Start your morning off right with these Savory Spinach Waffles – your tastebuds are going to flip for more!
What You Will Need to Make Savory Spinach Waffles:
- 2 cups of your favorite waffle mix, I have found most to be interchangeable for this recipe
- 1 very ripe banana
- 1.5-2 cups warm almond milk
- 1/3 cup walnuts
- ¼ cup flax meal
- ¼ cup almond flour
- ½ to ¾ cup organic spinach
- 3 tablespoons soft coconut oil, plus more for the waffle iron.
- dash of sea salt
How to Make Savory Spinach Waffles:
Add half of the warm almond milk to a blender along with the washed and dried spinach, banana, walnuts, flax meal and almond flour. Blend on high for a few seconds until completely smooth then allow to rest for 5 to 10 minutes to thicken a bit.
Add the soft coconut oil to the smoothie like mixture and blend until combined.
Stir this into the dry waffle mix. Slowly add in more of the warm almond milk as needed. When I hit the consistency I’m looking for I like to let it rest for another 10 minutes while the waffle iron heats up. This allows the batter rise a bit more.
Add a bit of coconut oil to the waffle iron before each waffle being made. Cook on medium heat until both sides are golden or until your iron indicates they are done.
I like to place the cooked waffles on a cooling rack until ready to serve, even if its only 3 minutes, this keeps the outsides perfectly crispy and almost fried from the coconut oil while the insides are soft and chewy.
Then serve them up and enjoy! Nom Nom!
